About Green Tek Nonstick Technology:

In the more recent past, the Environmental Protection Agency (EPA) has taken the leading manufacturer of nonstick compounds to task over excessive emissions of PFOA (Perfluorooctanoic Acid). PFOA has been used as a catalyst in the production of PTFE (Polytetrafluoroethylene), the basic building block for all nonstick cookware surfaces.

PFOA is a chemical that is hard to break down in the environment. It has a half life of 3.8 years, meaning that if there are 4 grams of PFOA in the body today, the body will have 2 grams in it in four years from now, 1 gram in eight years from now and so on. The human metabolism does not remove PFOA. While it is not a carcinogen or toxin and is generally assumed inert and not harmful to your health, it is environmentally unfriendly and just sticks around forever. That is why the EPA and the leading nonstick manufacturer have agreed that by 2010, the amount of PFOA used to produce PTFE compounds need to be cut by 95%, and by 2015 no PFOA could be used, at all.

Towards the end of this process, PFOA is completely extracted via ionization filters. Even if any traces of PFOA were still present by the time the nonstick compound reached the cookware factory, the pan surface curing temperatures would destroy such remnants. The same is true for the old nonstick compound used for Scanpan Classic and Scanpan Professional. That’s why Scanpan has always been able to present the finished product as not containing PFOA.

Why is Scanpan Environmentally Friendly?

Scanpan cookware has always been PFOA free, but the negative publicity that PFOA and, by extension, PTFE had received over the last few years, had caused Scanpan to work closely with their suppliers to find a substitute for PFOA that is environmentally friendly and biodegradable. Taking Care of Scanpan Classic Cookware:

1. Before first use, remove all packing materials, labels and tags and wash pan in hot, soapy water. Rinse well and dry. Assemble the glass cover handle, if applicable, following the instructions on the poly bag that holds all handle parts. Tighten by hand, only, do not use tools. Make sure the small washer that goes on the underside of the glass cover is flush with the glass surface. If not, turn the washer around and re-assemble the handle.

2. Heat pan to working temperature. Medium heat is typically sufficient for frying and sauteing. Since each stove top has its own settings, find the best heat setting for your stove by starting at a lower setting, then gradually increase until water splashed on the pan surface evaporates immediately with a sizzle. High heat can be used for other applications, like boiling water, stir frying, oven roasting etc. Scanpan Classic Cookware is oven safe to 500 degrees F.

3. Scanpan Classic can be used without oil, butter, or other seasonings, making it especially suitable for low fat diets.

5. Why is Scanpan Environmentally Friendly?

Scanpan Cookware has always been PFOA free, but the negative publicity that PFOA and, by extension, PTFE had received over the last few years, had caused Scanpan to work closely with their suppliers to find a substitute for PFOA that is environmentally friendly and biodegradable. Scanpan received patents on PFOA-free technology in 2007 and has been producing Scanpan Classic and Scanpan Professional with this new process since spring 2007. With their new Green Tek technology, there is no PFOA used at any stage of the entire process, resulting in a "clean and green" nonstick PTFE compound, the production of which no longer uses chemicals that could have a negative impact on the environment.

Taking Care of Scanpan Professional Cookware:

1. Before first use, remove all packing materials, labels, and tags, and wash pan in hot, soapy water. Rinse well and dry.

2. Heat pan to working temperature. Medium heat is typically sufficient for frying and sauteing. Since each stove top has its own settings, find the best heat setting for your stove by starting at a lower setting, then gradually increase until water splashed on the pan surface evaporates immediately with a sizzle. High heat can be used for other applications, like boiling water, stir frying, oven roasting etc. Note: Scanpan Professional is oven safe to 500 degrees F.

3. Scanpan Professional can be used without oil, butter, or other seasonings, making it especially suitable for low fat diets.

4. After use, remove food and clean Scanpan cookware with warm, soapy water. Scanpan Professional wipes clean with a sponge. Scanpan Professional is dishwasher safe. Scanpan recommends using extra care if you decide to clean the pans in the dishwasher to prevent damage to plates, glassware, etc.

5. When storing Scanpan cookware and nesting (placing smaller pots inside larger pots) is required due to space limitations, Scanpan recommends placing a paper or cloth towel between the pots and pans to prevent scuff marks.

Question: In today’s world, where terror and tragedy seem omnipresent, the fear of violence never seems more heightened. Is the world a more violent place than it ever has been?

Gavin de Becker : Your question contains much of the answer: today’s world, "where terror and tragedy seem omnipresent..." The key word is "seem." When TV news coverage presents so much on these topics, it elevates the perception of terrorism and tragedy way beyond the reality. In every major city, TV news creates forty hours of original production every day, most of it composed and presented to get our attention with fear. Hence an incident on an airplane in which a man fails to do any damage is treated as if the make-shift bomb actually exploded. It didn’t. Imagine having a near miss in your car, avoiding what would have been a serious collision--and then talking about every hour for months after the fact. Welcome to TV news.

To the second part of your question, No, the world is not a more violent place than it has ever been, however we live as if it were. The U.S. is the most powerful nation in world history--and also the most afraid.

Question: Your bestselling book The Gift of Fear gives many examples to help readers recognize what you call pre-incident indicators (PINS) of violence. What role does intuition play in recognizing these signals?

Gavin de Becker: Like every creature on earth, we have an extraordinary defense resource: We don’t have the sharpest claws and strongest jaws--but we do have the biggest brains, and intuition is the most impressive process of these brains. It might be hard to accept its importance because intuition is often described as emotional, unreasonable, or inexplicable. Husbands chide their wives about "feminine intuition" and don’t take it seriously. If intuition is used by a woman to explain some choice she made or a concern she can’t let go of, men roll their eyes and write it off. We much prefer logic, the grounded, explainable, unemotional thought process that ends in a supportable conclusion. In fact, Americans worship logic, even when it’s wrong, and deny intuition, even when it’s right. Men, of course, have their own version of intuition, not so light and inconsequential, they tell themselves, as that feminine stuff. Theirs is more viscerally named a "gut feeling," but whatever name we use, it isn’t just a feeling. It is a process more extraordinary and ultimately more logical in the natural order than the most fantastic computer calculation. It is our most complex cognitive process and, at the same time, the simplest.

Intuition connects us to the natural world and to our nature. It carries us to predictions we will later marvel at. "Somehow I knew," we will say about the chance meeting we predicted, or about the unexpected phone call from a distant friend, or the unlikely turnaround in someone’s behavior, or about the violence we steered clear of, or, too often, the violence we elected not to steer clear of. The Gift of Fear offers strategies that help us recognize the signals of intuition--and helps us avoid denial, which is the enemy of safety.

Question: Your latest book, Just 2 Seconds, has been called a "masterpiece" of analysis on the art of preventing assassination. It contains an entire compendium of attacks on protected persons across the globe. What motivated you to put together such a definitive reference? What tenets can be applied to one’s everyday life?

Gavin de Becker: Most of all, we wrote the book we needed. My co-authors and I had long looked for an extensive collection of attack summaries from which important new insights could be harvested. Unable to find it, we committed to do the work ourselves, eventually collecting more than 1400 cases to analyze. Many new insights and concepts emerged from the study, and the one most applicable to day to day life, even for people who are not living with unusual risks, is to be in the present; pre-sent, as it were. Now is the only time anything ever happens--now is where the action is. All focus on anything outside the Now (the past, memory, the future, fantasy) detracts focus from what’s actually happening in your environment. Human being have the capacity to look right at something and not see it, and in studying such a crisp event--the few seconds during which assassinations have occurred--Just 2 Seconds aims to enhance the reader’s ability to see the value of the present moment.

Q: Why did you feel compelled to write a biography of Derek Jeter?

A: As I say in the introduction to The Captain, the answer is found in my son’s closet, a mini-warehouse of youth baseball jerseys graced by the frayed number 2. With Derek Jeter nearing the end of his iconic career, not to mention a milestone (3,000 hits) no New York Yankee has reached, I thought it was the right time to do a head-to-toe examination of Jeter’s mass appeal. He is the DiMaggio of his time, a beloved but distant figure. My goal was to humanize Jeter. I wanted to paint a public portrait of a private man while celebrating his dignified approach and explaining why his number 2 is number 1 in the closets of kids everywhere.

Q:How did you gather all the material in The Captain?

A: I’ve covered Jeter’s entire career as a newspaper and Internet columnist in the New York market, so I had a strong base of firsthand observations and knowledge and one-on-one and group interviews with Jeter to work with. I also conducted more than 200 interviews exclusively for this book, including conversations with Jeter and past and present teammates, coaches, friends, opponents, teachers, scouts, executives, admirers, and detractors. (I define his detractors as admirers willing to discuss the shortstop’s human flaws.)

Q: What is your favorite anecdote in the book from Jeter’s early years as a Yankee?

A: One of my favorites involves the period before Derek was drafted. As a child he started telling his parents and others he would someday play shortstop for the New York Yankees, and as a teenager he predicted to some that he would marry Mariah Carey (well, he almost went 2 for 2). But the surreal twists and turns of the draft of ’92, when Jeter dropped into the Yankees’ lap as the sixth overall pick, lends credence to the notion he was meant to be a Yank. Houston rejected the advice of its lead Jeter scout, a former Hall of Fame pitcher for Detroit named Hal Newhouser, who resigned because the Astros didn’t pick Derek at number 1 (they took college star Phil Nevin instead). Cincinnati scouting director Julian Mock rejected the advice of his own people and decided in the middle of a draft-day jog to select a college outfielder from central Florida (Chad Mottola) instead of the high school shortstop from Kalamazoo (Jeter) at number 5. To this day, Derek swears he was so convinced he was going in the top five of the draft, he didn’t even know that his dream team, the Yankees, were picking sixth. He knows now... I also enjoyed discovering how Cal Ripken Jr.’s decision to shake a young boy’s hand in 1993 ultimately put twelve-year-old Jeffrey Maier in the Yankee Stadium stands in 1996, when Maier deflected Derek Jeter’s home-run ball into American League Championship Series lore and helped end Baltimore’s season and Ripken’s indelible reign at short.

Q: Jeter is often portrayed as the perfect athlete. Is he perfect?

A: Jeter is about as close to perfect as a superstar athlete can get, but no, he is not an infallible player or person. As a product of parents who raised him on the strict terms of behavioral contracts he was compelled to sign, Jeter never put himself or his team in an embarrassing position. But he’s been overly sensitive to criticism, he’s terrible at forgiving and forgetting those he believes have slighted him, and at times he could have been a better captain to Alex Rodriguez, who craved Jeter’s approval in his early seasons as a Yankee. Jeter didn’t give it.
